PALEO, RECIPIES, WHOLE30 Whole30 Watermelon Salad December 29, 2018

If you’re in need of a quick snack with some freshness, try this watermelon salad.  It’s a refreshing snack that reminds me of a nice warm day in the middle of winter.  The fat from the e.v.o.o. will help satisfy your tummy, and the zest from the lime will wake up your inner beach vacation dreams.

Also, if you aren’t on a Whole30, try it with some goat cheese for a nice creamy addition!

 

RECIPE

Ingredients:

  • 2 cups of diced watermelon
  • handful of mint, chopped
  • 3 tbs balsamic vinegar
  • 2 tbs extra virgin olive oil
  • juice from 1/2 lime
  • zest from 1 lime

Instructions:

  1. Mix balsamic, e.v.o.o, and lime juice in a bowl.  Pour over watermelon.
  2. Top with mint and lime zest.
