PALEO, RECIPIES, WHOLE30 Tomato and Cucumber Salad December 9, 2018

I’ve been really digging tomato and cucumber salad lately.  I’ve been having it as a snack in the mornings, or if I have it after the gym I’ll throw a half an avocado for extra calories.  I use Primal Kitchen’s Italian Dressing, which keeps it clean for a Whole30, but the base of the dressing is avocado oil, so it’s a really nice dose of fat too.  If you’re following a keto menu plan, it really works as a nice compliment.  However, because it’s so easy to make, I’m not sure if it even qualifies for a recipe?

 

RECIPE

Ingredients:

  • 2 cucumbers, cut into half or quarter moons
  • 2 large tomatoes, cut into half or quarter moons
  • 1/4 of a red onion, slices
  • bottle of Primal Kitchen Italian Dressing
  • pinch of salt

Instructions:

After chopping ingredients, put everything in a bowl and let marinate.  It taste better the longer you let it sit, but I do tend to have some soon after I get it put together.
