This is a new one for me. I’ve always loved the photographs of chia pudding, but I’ve never actually had any until I wanted to photograph it myself. While the photo shows a drizzle of maple syrup (paleo friendly) the Whole30 version will omit the syrup. I found the coconut milk and chia itself fulfilling and lasted throughout the morning, which admittedly, surprised me. Feel free to add nuts to increase the protein in your pudding also. The fruit can be mixed and matched to what you like, and adds enough sweetness. I would also suggest using Nut Pods Vanilla Creamer if you’d like a little vanilla flavor.
- 1 cup coconut milk
- 2 tbs chia seeds
- fruit of choice
- nuts (optional)
- drizzle of maple syrup (paleo compliant)
- Mix the coconut milk and chia seeds in a bowl and refrigerate overnight. They will become a thick, gelatin consistency.
- Combine chia with berries, fruits or nuts.
- Top with maple syrup (optional).
