PALEO, RECIPIES My Favorite Things – Dark Chocolate Pudding December 6, 2018

My first favorite thing is decadent and delicious, yet so simple, you can make it for a small dinner party, or as dessert bites for a larger gathering.  It’s also “versatile”, which means you can make it as dark or as sweet as you prefer.  The ingredients come together quickly, and the hardest part is waiting for it to set up!




  • 1 cup organic coconut cream
  • 1/4 cup unsweetened cocoa powder, sifted
  • 3 Tbsp pure maple syrup
  • 2 tsp pure vanilla extract
  • pinch fine grain sea salt


  1. In a small saucepan whisk together the coconut cream, cacao, and maple syrup (start with 3 Tbsp, and add more to sweeten to your preference) until smooth.  The coconut cream will melt and the maple and cacao should combine well to create a smooth silky mixture.
  2. Continue to cook and wisk over low/med heat for about 2 minutes, or until the mixture just begins to simmer.
  3. Remove from heat, and stir in the salt and vanilla.
  4. You can pour the mixture into individual containers/bowls to chill and set, or simply in one larger bowl only and divide later on.  Cover and refrigerate until set, about 2-3 hours.
  5. You can also add a dollop of coconut whipped cream on top (see below)!


Hint:  You can also use the pudding as a chocolate dipping sauce!  Just combine as as above, but instead of chilling to set up, dip in your favorite treat first.  You can put the dipped treats in the fridge to set up!
Coconut Whipped Cream
  • organic coconut cream from a can
  • pure maple syrup
  • 2 tsp pure vanilla extract
  1. Place the chilled coconut cream in a large bowl.
  2. Beat on low/med with an electric hand mixer until smooth and creamy.
  3. Add your maple syrup and vanilla.
  4. Continue to beat on medium speed until fully combined and creamy.
  5. Cover and chill until ready to use (it will firm up after being chilled). The whipped cream can also be used right away.
